Ivory King Salmon, also called White King Salmon, are a rare and prized type of king salmon (chinook) found in Alaska. Unlike the more common red-fleshed kings, these salmon have a natural genetic trait that prevents them from storing the red pigment (astaxanthin) in their muscle, giving their meat a creamy white to buttery ivory color.
They make up only about 5% of all king salmon catches from Lynn (however, that changes each year), which makes them special and highly sought after. The flavor is rich and buttery—just like regular king salmon—but many people describe it as even more delicate, milder, and slightly sweeter.
